This April Manhattan Grill goes Dutch as they will not only have the wholesaler from The Netherlands flying over for a special evening on Friday 3rd of April, but they will also be serving the coconut wood smoked Texel lamb rack the entire month. It is said that even Her Royal Highness Princess Beatrix (former Queen of The Netherlands) is a fan of Texel lamb and served it at state banquets. Texel lamb has long been praised globally and is the leading breed of sheep in Europe. The breed originated from the island of Texel in The Netherlands and has since been introduced in different farming communities with New Zealand farmers taking a particular interest. However, the secret that sets the lambs coming from Holland apart from others is its characteristic taste of lightly salted meat which is derived from the salty air coming from the sea and the saline soil. Unlike traditional lamb, it cooks faster, is extremely tender with a delicate and juicy taste and has more meat with less bone and fat; all attributing to its superior quality. In general sheep are used for their meat as well as their wool production, however the Texel breed has been developed solely for their fine meat and are therefore slaughtered between six and nine months of age at an average weight of 20kg.
