Beloved by ancient Egyptians, Greeks and Romans, the sublime white asparagus is the star of this stunning menu. Defined by its fresh flavor, softness with tops melting on your tongue, and regal spear like shape, the menu of asparagus inspired creations boasts a sumptuous choice of starters and main affairs.
Chef Ueli Bachofner showcases the royal vegetable in the early peak of the season to take your senses for a culinary journey with the very best selection.

Highlights include the marinated asparagus salad, in which the duck breast is slowly roasted with orange double cream salsa, Portulak and pine nuts; chilled asparagus soup with crayfish and double cream and a tantalizing veal medallion with asparagus piccata, Lobster potatoes and green asparagus sabayon.
Culminate with the new dessert creations for a sweet ending featuring a crème brûlée of asparagus with balsamic and mint strawberry; asparagus and lime fondant with mascarpone cheese and a delicious sweet ricotta tartlette with asparagus spears and quince sabayon.
