Executive Chef Ueli Bachofner has created a menu embracing new culinary ideas with Mediterranean influences and Middle Eastern savor.

For starters, the new à la carte menu features the mouth-watering homemade Foie Gras terrine served with cauliflower mousse, fresh figs and Melba toast. The Encore Bistro Signature starter is golden deep fried tiger Prawns in Katafi crust and the Chef's favorite Lobster cream.
Main course choices include steaks, poultry, seafood and pasta dishes. Savor the seared veal chop stuffed with porcini mushrooms and a pan-fried honey glazed Duck breast. Featuring the Signature dish oven roasted sea bass with thyme served with artichoke ragout, baby leek, beetroot, and lemon butter sauce.
Guests can culminate their culinary experience with fantastic desserts, including the Signature Desserts Bourbon Cake covered with Crustillant of praline, pyramid of saffron Panacotta and warm apple Tartin.

Encore Bistro shaped in form of a half crescent is adorned by hanging Arabian royal handmade lamps; the mounted torches lead you to another epoch. Its harmonious décor embellished with warm colors features Mediterranean and modern style furniture.
