Embassy Dubai's Kitchen 45 Launches New Seasonal Menu with Concept of Sharing
 

Chef Maxime Le Van ‘shares' secrets about his new menu and top dishes

Dubai, UAE 07 May 2013: Kitchen 45, Embassy Dubai's exquisite restaurant perched at the top of Grosvenor House Dubai, Tower Two has recently launched its new menu with a sharing section, incorporating a fresh approach to dining in the elegant restaurant.
“Our guests love to come to Kitchen 45 and taste the many refined flavours of our dishes,” remarks Chef Maxime Le Van. “Our latest menu is designed to incorporate a different approach to dining, as it encourages guests to share their meals and taste more of the dishes available to them. Being able to share dishes with family and friends can be uniquely refreshing and entertaining, and is a nice change from the usual personal dining experience.”


According to Chef Maxime, the dishes will allow diners to customize their delectable meals by ordering a range of larger dishes to share with other diners on the table without compromising on taste. Staying true to the style and authenticity of Kitchen 45, each dish will be infused with the finest flavours of the Mediterranean and French Provence, ensuring that even the most stubborn palette is satisfied.


The U.S. prime beef tagliata is predicted to be one of the top sellers on the new menu; thin slices of tender beef are perfectly cooked until medium-rare and served with pecorino and root vegetables. Other headliners in the shared portion include a fresh Nicoise salad with confit tuna, the fritto misto with fish, shellfish, and salsa verde, and la burrata with tomato, basil, and aged balsamic.
The menu also incorporates seasonal inspirations including the white & green Asparagus as well as courgette flower served with broad beans for starters, both of which come highly recommended by Chef Maxime himself. The newest mains on the menu include spring vegetable risotto with artichoke and wild mushrooms, as well as the succulent roasted duck breast with sweet potato, harissa, and milk curd.
And for those seeking bolder tastes, the rabbit raviolis in foie gras sauce, squab pigeon with Jerusalem artichoke and braised lamb shoulder are sure to pack a flavourful punch; seafood lovers will find it hard to resist the lobster tagliolini – a French-inspired bisque accentuated with tomato marmalade. 


As the final stop on this culinary exploration, taste buds will tingle after sampling the chocolate fondant with bay leaf ice cream, ginger, and caramel sauce or the pistachio crème brulee with chocolate sorbet, mangosteen, and coconut pearls. Kitchen 45's expanded dessert menu is sure to bring the dining experience to a sweet end.
